Five Months ago a new ice cream shop opened in Collinsville. It serves Homestead Creamery’s award winning ice cream, 16 flavors to be exact. In the beginning and currently, Livy’s is run out of a mobile trailer. It travels the Martinsville-Collinsvile area seven days a week.
However, Livy’s will soon have a permanent home in Collinsville too. Owner Rodney Billings has plans to establish the location at 2824 Virginia Avenue. The new building will be built right next to where the original trailer can be found most days.
Billings plans to open the storefront in October and introduce even more Homestead flavors to his current lineup. Renovations are expected to cost over $20,000 which include interior and exterior work.
The owners are extremely thankful to their patrons for all of the support. Billings says that without the community this new location wouldn’t be possible. Livy’s will continue to be open every day during the week.
